Ed Carr began his quest to craft a world‑class Australian sparkling wine in 1988 and founded House of Arras in 1995; by 1998 he decided to source all fruit from cool Tasmanian vineyards.
Today he blends grapes from up to six sub‑regions. The Brut Elite Cuvée 1801 combines about 49% Pinot Noir, 42% Chardonnay and 9% Meunier. Only free‑run juice is used, and the wine is aged on lees for four years before disgorgement with a dosage around 5.2 g/L.
Aromas of toast, citrus zest and herbs lead to a palate layered with spice, lemon and savoury autolysis; fine acidity and a persistent finish underscore its maturity.
